This week we had a couple days that were over 65 degrees and after such a brutal, snowy winter, it really gave me the itch to go shopping!  You know when you get this uncontrollable feeling to want to walk out of the mall with shopping bags and a huge smile (minus the empty wallet.)  So I am getting a couple of my girlfriends together this week and we are going to have a little retail therapy to start off spring.  This is what is on my wish list for this week.  I am totally loving these Anthropologie Bonito booties- they would be perfect with any floral/colorful spring dress.  The cute, sand colored watch from Francescas Boutique is a perfect accessorie to dress up a casual outfit.  Colorful Tory Burch flats are my splurge of the week but totally worth it for those days where you just can’t handle heels and still want to look put together.  Throw it together with a light scarf like the Forever 21 scarf and the Button Bag above and you have a chic casual look.  Lets get shopping ladies!

Go Green

Saint Patricks Day is such a fun holiday because it is a great excuse to drink lots of beers and turn everything green!  I remember when I was little, we would make green milkshakes, put shamrock tattoos on our faces, and just enjoy this special Irish tradition.  This Saint Patricks Day I am making pistachio cupcakes- they are  absolutely delicious and of course festive.  Also the funpart of this holiday  is you can get away with all kinds of fun green accents to your style such as glittery green nails and shimmery green eyeshadow. 

Pistachio Cupcake Recipe

Ingredients:

  • Vanilla cake mix (plus all ingredients on box- ie. milk & eggs) 
  • 2 boxes of pistachio pudding (I prefer Jell-O)
  • 1 pint of whipping cream

Directions:

Cake- Make vanilla cake as described on box.  Add 1 box of pistachip pudding and whip until well mixed.

Frosting- Mix/whip whipping cream and second box of pistachio pudding until creamy.  This makes a perfect frosting to frost on top of cupcakes.

Decorate with shamrock sprinkles or sugar.  Serve and enjoy!

Low Fat Guacamole

The fat in avacoados is the “good” fat  that can have benefits to your body and skin since most of the fat is monounsaturated, it can actually help lower cholesterol.  With that said, we can lower the amount of fat by replacing some of the avocado with peas- this will save so much fat and still have the same texture and color as regular guacamole.  This way your guests will never know the difference.  Since today is the start of March Madness (the NCAA selection show is tonight), it is a perfect night to make some yummy appetizers and a couple drinks.  I am not going to even let my fiance know that this guacamole is a lower calorie version.. shhh! 🙂

Ingredients:

  • 10-ounce pack of frozen peas
  • 1/2 small ripe avocado
  • 1/2 cup cilantro, stems removed
  • 1/2 ripe tomato, deseeded and chopped
  • 1/3 cup chopped onion (optional)
  • Squeeze of fresh lime juice
Preparation:
Cook peas according to package instructions. Empty into a colander, drain and rinse with cold water. Place peas, avocado and cilantro in a blender and blend to desired consistency. Spoon into a bowl with chopped tomato and onion. Add a squeeze of lime juice, stir and serve with tortilla chips.  This goes great with my Italian Margarita recipe in my last post!

Italian Margarita

 

Mexicans make the best margaritas, right?  Think again!  The Italian Margarita is a fun twist to the average margarita.  And i experimented with the recipt to make it the Skinny Girl way!  Since it is Thursday, it is a perfect night for a night in watching a marathon of Sex & the City reruns with my best friend, with of course, a delicious Italian margarita in hand.  This drink is less then 130 calories!

  • 2 oz of Clear Premium Tequila (I prefer Patron or Cabo)
  • Splash of Orange Liquor
  • Juice of 4 Fresh Lime Wedges
  • 1 1/4 ounces amaretto liquor
  • Pour all ingredients into a shaker and shake very well.  Rim the glass with sugar instead of salt-it will bring the amaretto flavor out.  Garnish with a lime wedge.  Serve on the rocks.  These go awesome with guacamole.. low calorie recipe coming soon!

    Red, White, & Blue Fruit Smoothie

    I definitely had the Monday blues this morning.  After a crazy busy weekend, it was hard to get out of bed this morning, especially on a rainy day.  On days like this, I need a little more than coffee.  A protein enriched fruit smoothie is the answer to take on a busy Monday filled with conference calls and meetings.  This is what you will need:

  • 1 banana
  • 1/2 cup fresh strawberries
  • 1 (8oz) container of Blueberry Greek Yogurt
  • 5 ice cubes
  • Direction: Chop banana in small pieces as well as strawberries.  Mix yogurt, fresh fruit, and ice cubes in a blender. Add ice cubes as needed for desired consistency. This makes an amazing breakfast that will keep you full and give you energy throughout the entire morning.  This is the new breakfast for champs!  I prefer using Greek yogurt over regular yogurt because it has lower sugar and higher protein content, which makes you feel fuller.  It is also a little thicker so it makes the smoothies more satisfying and creamy.  Enjoy!
