The fat in avacoados is the “good” fat that can have benefits to your body and skin since most of the fat is monounsaturated, it can actually help lower cholesterol. With that said, we can lower the amount of fat by replacing some of the avocado with peas- this will save so much fat and still have the same texture and color as regular guacamole. This way your guests will never know the difference. Since today is the start of March Madness (the NCAA selection show is tonight), it is a perfect night to make some yummy appetizers and a couple drinks. I am not going to even let my fiance know that this guacamole is a lower calorie version.. shhh! 🙂
Ingredients:
- 10-ounce pack of frozen peas
- 1/2 small ripe avocado
- 1/2 cup cilantro, stems removed
- 1/2 ripe tomato, deseeded and chopped
- 1/3 cup chopped onion (optional)
- Squeeze of fresh lime juice
Preparation:
Cook peas according to package instructions. Empty into a colander, drain and rinse with cold water. Place peas, avocado and cilantro in a blender and blend to desired consistency. Spoon into a bowl with chopped tomato and onion. Add a squeeze of lime juice, stir and serve with tortilla chips. This goes great with my Italian Margarita recipe in my last post!
