Strawberry Trifle (Healthy recipe)

Hope you all had a fabulous Thanksgiving filled with joy & delicious food.  With that said, during this holiday season it is hard to stay on a healthy track with all the holiday treats around.  My idea is that the next holiday gathering I go to, I am bringing a healthy dessert because when there are delicious healthy choices amongst the cookies, brownies, and cheesecakes, it may make healthy choice just a little easier.

Ingredients:

  • 10-ounces frozen, unsweetened strawberries
  • 1/2 cup confectioners’ sugar
  • 1 1/4 cup nonfat vanilla yogurt
  • 2 egg whites

Directions:

  1. Combine strawberries and sugar in a food processor and blend until smooth, about 30 seconds.
  2. In a medium-sized mixing bowl, combine strawberry mixture and yogurt.
  3. In a separate bowl, use a hand mixer to whisk egg whites until they form stiff peaks.
  4. Add egg whites into the mixture and stir until smooth.  Spoon into serving glasses and chill for at least 1 hour before serving. Garnish with mint just before serving.

*You can also add angel food cake to this recipe which is a very light cake.

Thanksgiving Eve

We all know Thanksgiving Eve is one of the biggest nights out of the year.  For me, it started Freshman year in college, it was the first time you see all your friends from highschool when you come home for Thanksgiving.  It’s a great way to catch up with your friends from your hometown and just have a good time before the holiday.  Since I have to make a couple side dishes and desserts, I am not going all out tonight- just out for a couple hours for tradition’s sake.  This calls for a comfortable, versatile, and warm outfit.

This weekend and this week has been very busy & exciting.  We went to Hoboken, NJ and had a blast & with the holiday coming up, I have been trying to catch up on all of my shopping and errands.  What better way to share my week than in pictures?
