Hearty Healthy Omelet Recipe

Omelets are one of my favorite meals because they are so delicious and high in protein.  When I have an omelet for breakfast, it keeps me full through the day.

Ingredients

  • 3 eggs  & 3 egg whites (or substitute)
  • 2 oz. meat- ham or turkey bacon
  • 1/2 c. shredded low-fat cheese (cheddar, Swiss, soy, feta, etc.)
  •  4 scallions, chopped (or onions)
  • 1/4 red pepper, chopped
  • 1/2 zucchini, chopped

Directions

1). Spray an 8″-10″ nonstick frying pan with olive oil and heat on medium.

2). Whisk the eggs, water, and scallions and pour into hot skillet.

3). Cook for about 3 min. or until the eggs are starting to set on bottom; using a thin spatula, carefully lift the edges and allow the uncooked mixture to run underneath.

4). Spread the cheese over half of the omelet. Cover and cook for 2 min. or until just set.

5). Top the cheese side of the omelet with the avocado and any meat you may be using, then fold the omelet in half.

6). Cover and let sit for several minutes before cutting in half and serving.

Rasberry Cheesecake Martini

Instead of a traditional dessert, why not have a cocktail dessert?  You get the best of both worlds.  This recipe will be sure to impress your taste buds.

ingredients

1 1/2 oz vanilla vodka
1 oz. raspberry liquer (ie. chambord)
1 oz. heavy cream
crushed graham crackers mixed with granulated sugar for the glass rim

directions

Shake all ingredients with ice in a martini shaker, strain into a chilled martini glass garnished with the crushed graham cracker mixture around the rim.  Throw in a couple fresh rasberries for garnish.

Bite size treats

When things are mini they are just cuter, right?  After going into the cutest donut shop with mini donuts.  The bite size treats made me think of all the things that are much better in smaller sizes.

Mini cheesecakes.  A great alternative to cupcakes.

Bite size tacos.  Just use the Tortilla scoops and fill with your favorite taco filling.  Genius!
