Tortellini & Balsamic Chicken

This dish is so fresh and perfect for those nights that you are craving gourmet Italian. The secret to this recipe is getting the right balsamic glaze. It’s hard to find a true balsamic glaze, which in not watery like dressing. My favorite is from Trader Joes, the Trader Giotti’s Balsamic Glaze.  Recipe is below… enjoy!

Ingredients:

  • 1 package cheese filled tortellini
  • 1 onion, chopped
  • 2 Roma tomatoes, chopped
  • Fresh basil, finely chopped
  • 3 tablespoons balsamic glaze
  • 2 pieces boneless skinless chick breast, sliced julienne
  • 1 tablespoon olive oil
  • 2 tbsp. Romano cheese

Directions:

In bowl, mix chicken, balsamic glaze and fresh basil until chicken is evenly coated.  Heat olive oil in skillet on medium. Add chopped onion and sliced chicken. After about half cooked, add in sliced roma tomatoes.  While chicken is cooking, start tortellini (follow instructions). Leave chicken on skillet for about 7-8 minutes or until chicken is fully cooked. Mix tortellini and everything in skillet and sprinkle Romano cheese.  Serves 2-3 people.. enjoy!

Steal of the Week!

I get so excited when I find a deal that is unbelievable. This cotton patterned dress was $5 on clearance at Marshall’s. It was not maternity but fit perfectly! The leather sandals were also from Marshall’s, Franco Sarto for only $25. All in all, I was so thrilled with this $30 complete look.

Little Peanut Baby Shower

This past weekend was my baby shower and I was lucky enough to have a beautiful, warm day to spend with my friends & family.  My mom & MIL  did a great job with delicious food, an adorable elephant cake, and the most unique favors which I can indulge in after baby is born.  The favors were “mommy sippy-cups” and they were plastic, portable glasses filled with wine. Needless to say, they were a hit!  The dress I chose was actually not maternity- it was a very inexpensive dress from Forever 21 but since the material was loose and flowy, it was perfect for the occasion and so comfortable. I am so blessed to have such wonderful people in my life!
