The Nordstrom Anniversary Sale is here through Sunday and per usual, does not disappoint. The clarisonic brush (which I highly recommend) has an awesome deal with free gifts. “Left-overs” Chicken Quesadillas

As a new mom, it is almost impossible to have time to cook dinner every night, let alone eat dinner.  I find myself trying recipes that are quick and take more shortcuts than ever.  I bought a chicken rotisserie breast and made some roasted potatoes and asparagus for a side which was the perfect wholesome and easy meal.  I had some leftover chicken breast and definitely did not want to waste it so I looked in the fridge and threw together some ingredients to make the perfect left-over dinner, Chicken Quesadillas.  You can make this with chicken, steak, vegetarian.. basically whatever leftovers you have.  I do not have a quesadilla-maker but I do have a panini press which worked out perfectly.

Ingredients (can vary based on what left-overs you have)

  • left-over chicken cut into small squares
  • cheddar cheese
  • salsa
  • sour scream
  • avocado sliced thin
  • large wraps

Directions:

Lay wrap flat and layer chicken, cheese, avocado, salsa and sour cream on one half.  Fold wrap to close over all ingredients.  Put in panini press for about 3 minutes until all ingredients are hot.  If you do not have a panina press, simply fry on pan for 3 minutes each side. Enjoy!

Low-fat Starbucks-inspired Strawberry Frappuccino

The other day I was craving a Frappuccino badly but being 8 weeks post-partum, I really am trying to watch my calories. At Starbucks, the strawberries & creme Frappuccino is 15g of fat & 54 sugars. I am all for treating myself but would rather save the calories for a glass of wine (or 2) or an icecream sundae! Then I realized, I have strawberries and a Vitamix and I conquered a low-fat Starbucks-inspired version on my own. This version is 80 calories, 8 g sugar, and 5 g fat.

Ingredients:

  • 1 cup organic frozen strawberries (you can use fresh but I like frozen to keep smoothie cold)
  • 1 1/4 cup almond milk
  • 2 tablespoon organic palm sugar (or sugar of your choice)
  • 3 ice cubes

Directions: In a blender, mix in strawberries, almond milk, ice and sugar on high speed.  Mix until creamy & smooth.  Pour in glass & top with light whipped cream.

Project Organize {on a budget}

I’ll admit, I am not the most organized person. However, once I find a system that works, I find it much easier to stay organized so I got motivated and organized my beauty products and accessories with just a few bucks. I LOVE these Ikea spice racks for organization. I painted them white, hung them up in my bathroom and it is the perfect place to organize skin and hair products. These are only $3.99!

My accessories were tucked away in a drawer and I really wanted them on display so when I get dressed I can see what my options are. These space-saving hangers are perfect to hang accessories right in your closet and these are under $10.

My makeup brushes were just kind of sprawled across my counter and I remembers I cleaned out the remaining wax of a candle jar. This is the perfect way to organize makeup brushes or anything for that matter. What do you do to stay organized?

I love to try new makeup but sometimes do not have the extra funds to fork out $30 for a new lip color. I also do not want to waste a ton of money on cheap beauty products. Here are my favorite drugstore picks, tried and true!  What are your favorite drugstore products?

1. Not Your Mother’s Beach  Babe Spray:  Love this stuff!  It smells like the beach and really gives natural tousled waves in just a few minutes.  I usually use this on a lazy hair day, spray in damp hair and tousle my hair with my fingers.

2. Revlon Colorstay Eyeliner: I have been using this eyeliner for years.  It lasts ALL day and does not smudge.  It’s also easy to apply.  The classic blck noir is my go-to, however they have some fun color selections if you;re feeling frisky.

3. NYC In a Minute Nail Polish:  For $1.99 you can have fun with color.  Dries quickly and pretty good quality for the price!  Fashion safari is the perfect beach inspired color for summer.

4.  Maybelline Master Glaze Blush Stick:  This is technically a blush, however, you can see that I used on my lips as well.  I love when a product can dual as two beauty products, especially for on the go.  It’s very moisturizing and I love the Coral Sheen color.

5.  L’oreal Telescopic Mascara:  By far the best drugstore mascara I have tried.  I was really impressed with the way it lengthens and thickens lashes.. I did not even need eyeliner when wearing this mascara (as seen above).  Perfect for an everyday mascara.
