As I enter my third trimester, I am getting so excited to meet my little boy! Prepping for the baby can be overwhelming but also a ton of fun. We (by we I mean my husband of course) started by painting the nursery a grayish blue color called Harbor Haze by Benjamin Moore. The color scheme we are going for is blue, gray, and pops of mint and gold. I found some adorable pictures at our local Hobby Lobby and decided to do an elephant theme for this little peanut since it goes with our color scheme. Below is an inspiration board of some nursery ideas, I cannot wait to share the finished product.

Flourless Almond Nutella Cookies (only 4 ingredients!)
I have been trying a ton of different flourless recipes for desserts and I must say, these cookies are one of my favorites. I actually combined a few recipes that I had tried and modified my own version. I decided to add Nutella because what would the world be without Nutella? Also, in honor of Michele Ferrero, owner and creator of Nutella who died on Valentine’s Day.
Ingredients
- 2 cups almond butter
- 2 cups sugar (I used coconut palm sugar)
- 2 eggs
- 1/2 cup Nutella
Instructions
- To Make The Cookies: Preheat the oven to 375 F. Line three cookie sheets with parchment paper.
- Combine almond, butter, sugar, eggs and Nutella in a medium mixing bowl. Mix thoroughly with a spoon.
- Use a 1 oz cookie scoop to make balls of dough.
- Bake in preheated oven for 9-10 minutes. Remove sheets and set aside to cool. Enjoy!
Buffalo Cauliflower Bites
I have been consistently craving spicy food during this pregnancy. Since a lot of spicy food translates into deep-fried or high-fat, I decided I wanted something healthy yet spicy to snack on. My first thought of was that cauliflower was not going to satisfy my craving, however I was pleasantly surprised. Hope you enjoy (guilt-free) as well!
Ingredients
6 cups of fresh cauliflower florets
2 teaspoons garlic powder
a pinch of salt
a pinch of pepper
1 tablespoon butter, melted
¾ cup Frank’s RedHot hot sauce
Instructions
1.Preheat oven to 450 degrees and place cauliflower on a baking sheet greased with cooking oil or olive oil.
2.Sprinkle garlic powder, salt, and pepper over the cauliflower florets.
3.Bake for 20 minutes.
4.Combine the melted butter and hot sauce into a small bowl and pour over the cauliflower.
5. Bake for an additional 5 minutes.
6 .Serve with ranch or blue cheese dressing along with carrots and celery sticks.
6 Month Update
Today marks 24 weeks of pregnancy for me. It has been such a roller-coaster ride and I am feeling great after 20 weeks of not-so-fun morning all-day sickness. Now, my main feeling is HUNGER! 🙂
I try to stay healthy by constantly keeping my tummy full on healthy snacks so I can maintain a healthy pregnancy. Unfortunately, my energy level has not been great, especially with all this snow, to work out much but I am so looking forward to the spring and waddling around outside and being somewhat active!
I cannot wait to meet this little guy (it’s a boy!) and am looking forward to enjoying the rest of my pregnancy. I am really starting to feel kicks and movement and those moments are so precious to me.
