Chocolate Covered S’mores

Of course nothing beats making fresh s’mores over a crackling fire but if you want to prepare a s’mores-like dessrt for a gathering, here is a delicious recipe.  I was inspired when I went to Block Island and they had these treats at a local fudge shop.

Chocolate Covered S’mores

Prep time: 15 minutes

Ingredients(Makes 6 squares):

  • 12 graham cracker squares
  • 1/4 cup marshmallow Fluff
  • 6oz chocolate(about 3/4 cup chocolate chips)

Method:

1. On half of the graham crackers, spread roughly 2 teaspoons of Fluff.

2. Sandwich each covered graham cracker with an uncovered one and put these aside.

3. Melt the chocolate in a microwave or over a double boiler until it is smooth and liquid.

4. One by one, lower the s’mores into the melted chocolate. Flip once and use a utensil to make sure the sides are covered as well as the top and bottom.

5. Take the s’mores out of the melted chocolate and put it on a non-stick surface to dry. You can quicken the process by moving them to the refrigerator once you’re done.

6. Repeat with all the s’mores.

7. Store in the refrigerator until ready to eat.

 

Chocolate Covered S'mores Fluff

Frozen Lemonade Pie

What can be more refreshing than this frozen treat on a beautiful sunny day with friends & family? So easy & so delicious.  Yum.

 Frozen Lemonade Pie

Ingredients:

  • Graham Cracker Pie Crust
  • 2 cups heavy cream
  • 1 14-ounce can of sweetened condensed milk
  • 1 can of frozen lemonade concentrate
  • Blueberries, raspberries, sugar and lemon juice

In a large bowl, make the filling of the lemonade pie by whipping the heavy cream until peaks form. Then fold in the combined lemonade and condensed milk into this cream. Pour this mixture into the pie crust, then freeze overnight to solidify the pie. Earlier in the day before serving the pie, create the topping by tossing the berries with the sugar, lemon juice and whipped cream if desired. Top the pie with this mixture when serving.

Banana Split Bites

These perfect portion bites are delish and so easy.  Grab a few bananas, sprinkles, chocolate, and ice cream and voila, you have the ingredients for these decadent mini dessert bites.

  • Use firm bananas and cut into 1 inch sections. Leave the peel on for easy handling, and with a melon baller, dig a well in the middle of each banana section. 
  • Melt chocolate in the microwave and dip the bottom portion of the banana in chocolate and then dip it once again in either non-pareils or chopped peanuts. To quickly harden the chocolate, place dipped bananas in the freezer for five minutes.
  • Fill each well with ice cream (I filled mine with vanilla chocolate chip) and top with whip cream and a maraschino cherry.  

Strawberry Sugar Biscuit Trifle

This Father’s Day since we are in our new home, we are inviting the dads to come over for an outdoor BBQ.  I really want to make a light, fruity dessert and heard about this mouth-watering strawberry trifle.  It’s like one large, delicious strawberry shortcake!  Do any of you have any Father’s Day recipe ideas?

 

Ingredients

  • Sugar Biscuits
  • 6  tablespoons  orange liqueur or orange juice, divided
  • 2 1/2  pounds  strawberries, halved
  • Trifle Custard
  • 1 1/2  cups  whipping cream
  • 1/4  cup  plus 2 tablespoons powdered sugar
  • Garnishes: strawberries, mint leaves

Preparation

Cut Sugar Biscuits in half; brush cut sides evenly with 5 tablespoons orange liqueur.
Line bottom of a 4-quart bowl or trifle bowl with eight Sugar Biscuit halves. Arrange strawberry halves around lower edge of bowl. Spoon one-third of Trifle Custard evenly over Sugar Biscuit halves; top with one-third of remaining strawberry halves. Repeat layers twice, ending with strawberry layer. Drizzle remaining orange liqueur evenly over top. Cover and chill 3 to 4 hours.
Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Spread over trifle; serve immediately. Garnish, if desired.
