Pumpkin Whoopie Pies

Someone made these last fall for our office and I had to learn.  It is a delicious treat that tastes like nothing else i have ever tasted before!  There are many variations of this recipe but below is an easy to follow one, the kind I like!

Pumpkin pie/cookie part:

2 c. pumpkin
2 eggs, separated
2 c. brown sugar
1 c. oil
3 c. flour
1 tsp. each cloves, cinnamon, ginger, salt, baking powder, baking soda & vanilla

 
Filling:
1 lb. 10x sugar
2 egg whites
2 tsp. vanilla
4 tbsp. flour
2 tbsp. milk
1 1/2 c. shortening
 
Directions:  Mix together flour, cloves, cinnamon, ginger, salt, baking powder and baking soda. Set aside.  Beat together pumpkin, 2 egg whites, brown sugar, oil and vanilla. Gradually add dry ingredients. Beat well after each addition.

Drop by teaspoonfuls onto baking sheet. Bake at 350 degrees for 12 to 15 minutes. Let cool.

To prepare filling: Beat 2 eggs until stiff. Add vanilla, flour and milk, beat well. Add shortening and 10x sugar. The more you beat it, the fluffier it gets! Spread between 2 cookies.

Fall Weddings

On Sunday, I went to a beautiful wedding at The Lake of Isles which is part of the Foxwoods/MGM resort.  It was a beautiful fall day– and their wedding had such beautiful fall colors and decor to go with the gorgeous season.  Since I had a summer wedding, I did not get to work with all the festive colors and themes that go along with fall so it made me think–what would a fall wedding look like to me?

Halloween decor

Leggings

I pulled out my first pair of leggings of the season yesterday.  I love leggings because they look adorable with boots, are so comfortable and look fabulous with a long tunic.  A couple legging rules:

1.  Leggings do not replace pants.  All shirts/tunics must cover your bum in order to wear leggings as pants. (unless you are going to a yoga class)

2. Leggings should not be see-through.  Make sure you check your pair under some good lighting.

3.  Choose the right material for your leggings.  If you are super-skinny, you can wear cotton or spandex leggings.  If you want to slim your legs, be careful of the material you choose because some of the leggings can be super thin and be less forgiving.

*My favorite work-out leggings are from Victoria Secret’s PINK since they are very nice material and slimming.  As for going out, I have a couple pairs from Hollister, Forever 21, and Juicy.*
