Thursday has historically been a great night to tease into the weekend.  As a UCONN alumni, I still have not kicked the “Thirsty-Thursday” mentality.  I just do it with a lot more class now.  (Fancy martinis instead of Nickel Night.)  Tonight I am having my best friend over so what can be more fun than some girl talk and a delicious cocktail?  I decided I am going to treat ourselves to some Creamsicle Martinis.  A perfect mix of fruity, creamy deliciousness.

What you’ll need:

  • 2 ounces orange-flavored vodka
  • 2 ounces Bailey’s Irish Cream
  • Splash of Orange Juice

Directions: Shake the vodka, Bailey’s in a martini shaker with ice to chill.  Add a splash of Orange Juice for color & flavor.  Pour into martini glass and garnish with an orange slice.  Enjoy!

Iced Coffee

I love my coffee and as soon as the weather gets a little warmer, I like to switch over to iced coffee.  On a lazy Sunday like today, it’s nice to be able to make it at home.  The nice thing about iced coffee, is it stays pretty fresh for a couple days so I made some extra for Monday morning too. 

Directions:

  • Brew your favorite coffe as normal.  Turn burner off and let cool until room temperature.
  • Pour some coffee into ice cube tray and put in the freezer.
  • Put coffee in large container or big jars and refridgerate for about an hour.
  • Once ice cubes are completely frozen, put in a cup and pour iced coffee in.  Add cream&sugar as desired.

*My favorite part of this homemade recipe is the coffee ice cubes because I hate when iced coffee gets watery! 🙂

Not-so-Virgin Shirley Temple

I used to bartend at a Karaoke bar and when it got slow, I would experiment behind the bar to make low-calorie cocktails.  One of my favorite concoctions was my Not-so-Virgin Shirley Temple.  I always loved Shirley Temples- they are so yummy and bring me back to my childhood.  This is a great guilt-free drink that you can easy mix up at home!

Ingredients

  • Club soda or Sprite Zero
  • tablespoon of grenadine (or just a splash)
  • Three Olives Cherry Vodka (or any regular vodka)
  • 2 maraschino cherries

Directions:

Since I worked at a private restaurant, we did free pouring when making drinks so you do not have to measure these cocktails out.  Pour Cherry vodka or your favorite vodka (cherry just makes the drink a little sweeter) for a 3 count.  Fill glass up with club soda or Sprite Zero and add a splash of grenadine.  Add 2 Maraschino cherries for garnish and flavor.  This drink only has 75 calories as a bonus.  Enjoy!

Sangria Sparkler

So today is my Birthday and I need to treat myself to a yummy birthday cocktail!  However, I am still in healthy/diet mode and would prefer a lower calorie drink.  Drinks such as margaritas, pina coladas, and mudslides can run 500-800 calories.  Yikes! 

Here are a couple calorie stats on popular drinks.. I know, I know- I’d rather not know too!!

LONG ISLAND ICED TEA (700 calories, 40 g sugars)

MARGARITA (500 calories, 32 g sugars)

PINA COLADA (625 calories, 75 g sugars)

 

Sangria Sparkler  Recipe

Prep: 10 minutes
Chill: 2 hours
Makes: 12 servings

750-milliliter bottle dry red wine
1 cup light orange juice
1/4 cup brandy or cognac
1/4 cup orange liqueur
2 tablespoons sugar
2 medium oranges, sliced
2 cups club soda, chilled
Crushed ice and/or orange peel curls (optional)

1. In a large pitcher, combine wine, orange juice, brandy, orange liqueur, sugar, and orange slices. Chill at least 2 hours. Add club soda before serving. Serve over crushed ice and/or with orange peel curls, if desired.

Nutrition Information per serving: 100 calories, 0g protein, 9g carbohydrate, 0g fat (0g saturated), 0g fiber

Italian Margarita

 

Mexicans make the best margaritas, right?  Think again!  The Italian Margarita is a fun twist to the average margarita.  And i experimented with the recipt to make it the Skinny Girl way!  Since it is Thursday, it is a perfect night for a night in watching a marathon of Sex & the City reruns with my best friend, with of course, a delicious Italian margarita in hand.  This drink is less then 130 calories!

  • 2 oz of Clear Premium Tequila (I prefer Patron or Cabo)
  • Splash of Orange Liquor
  • Juice of 4 Fresh Lime Wedges
  • 1 1/4 ounces amaretto liquor
  • Pour all ingredients into a shaker and shake very well.  Rim the glass with sugar instead of salt-it will bring the amaretto flavor out.  Garnish with a lime wedge.  Serve on the rocks.  These go awesome with guacamole.. low calorie recipe coming soon!
