Thin Mint Martini

One of my favorite St. Patty’s Day recipes is my pistachio cake which you can find here.  This year, I decided to take the green a notch further with some delicious girl scout inspired martinis.  I love chocolate and mint together so this drink is the perfect drink to get your liquor and peppermint patty fix.

Ingredients

2 oz Bailey’s Mint Chocolate Liqueur
1/2 oz. Vanilla Vodka

Instructions

Swirl chocolate syrup on the bottom of a martini glass. Add Baileys with a hint of Mint Chocolate and vodka to a cocktail shaker filled with ice. Shake  and strain into a martini glass. Garnish with something delicious such as a thin Mint Girl Scout’s cookie or junior mints.

Malibu Cupcakes

Coconut Rum cupcakes for an end of summer party?  I am in!  I came across this recipe in Cosmo and had to share!  I love coconut and who does not love a little fun infused in your cupcake?

Coconut Rum Cupcakes

  •           1 cup sugar
  •           1/2 cup butter
  •           2 eggs
  •           1 teaspoon vanilla
  •           1/2 teaspoon coconut extract
  •           contents of 1/2 vanilla bean
  •          1 1/2 cups flour
  •          1 teaspoon baking powder
  •         1/4 cup coconut milk
  •         1/4 cup shredded coconut
  • 1/4 cup coconut rum (I used Malibu)

Preheat oven to 350.

Cream butter, sugar, and eggs together until fluffy. Add vanilla and coconut extracts and mix until combined.

Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Add coconut rum and fold in shredded coconut.

Pour into cupcake tins and bake for 20-25 mins at 350. Let cool, then frost.

Malibu Frosting

  • 1 cup butter, softened
  • 1 1/2 – 2 lbs powdered sugar
  • 1/4 cup coconut rum
  • 1 tablespoon vanilla

Cream butter until smooth. Gradually add powdered sugar, alternating with rum and vanilla, until desired consistency is reached.

Sassy Water Recipe

I went over my mom’s house for dinner the other night and she had this refreshing homemade flavored water that she called Skinny Water.  It was so refreshing- I felt like I was at a spa about to get a massage.  It is Cucumber Mint Lemon Water and its is also known as Sassy Water or Skinny Water. This water is associated with the flat belly diet and it is known to detox your body, increase metabolism, reduce bloating, and calm your nerves.  Plus drinking water is the best way to stay full and since this water is yummy, it makes it super easy.  I fell in love with it!


Ingredients:8. 5 CUPS WATER
1 TSP/ GRATED GINGER
1 MED. CUCUMBER
1 MEDIUM LEMON
12 SPEARMINT LEAVES

Slice lemons and cucumbers into round wedges and mix in other ingredients.  Let sit overnight and refrigerate. Enjoy!  Drink 8 glasses per day.

Skinny Drinks

This weekend I am heading to Newport and I want to have a blast, however, I have been on a great healthy eating kick and do not want to throw that out the window.  So I am making sure to come prepared with skinny cocktail ideas and decided to share.  Cutting out calories does not mean cutting out the fun!

Berry Skinny Spritzer

It’s hard to find a yummy drink these days that are not filled with calories.  A margarita or pina colada can be over 600 calories- Yikes!  Since I love fruity cocktails, this berry drink is the perfect warm day-on-the-deck drink. 🙂

Pineapple Fresh Berry Cobbler from the Four Seasons Wailea (TRU lemon organic vodka, upcountry berry compote and pineapple juice)

Ingredients:

1 SPLASH PINEAPPLE JUICE, 1 SHOT BERRY VODKA, 6 OZ CLUB SODA or SELTZER

Directions:
Pour the vodka over ice in a tumbler, add just a splash of juice, then top it off with seltzer. Add a few berries or a wedge of pineapple as garnish and you’ve got a deliciously unique drink with only 120 calories.
