Sunday Funday

Today was a very fun day of family & football.  I am finally able to enjoy all my new things from Christmas and spent most of my gift cards so far so wanted to share my small pleasures with you.

Homemade Tabouli

Tabouli is a delicious, guilt-free snack that is perfect for dipping your favorite veggies, crackers, and breads.  I stumbles across this yummy recipe and had to share.

Ingredients
4 c. cooked barley
1/4 c. virgin olive oil
3 tbsp. fresh lemon juice
2 cloves finely minced garlic
1 c. coarsely chopped mint leaves
1/2 c. chopped fresh dill
2 c. seeded and diced plum tomatoes
2 c. seeded and diced cucumber
1/2 c. thinly sliced scallions
Salt and black pepper to taste
Fresh mint or dill sprigs for garnish
 
Directions
 
Toss cooked barley (be sure not to over cook) in a large bowl with the olive oil, lemon juice and garlic. Add the chopped mint and dill. Toss in tomatoes, cucumbers and scallions. Season with salt and pepper.Toss gently but thoroughly. Let rest for 1 hour so the flavors can blend. Garnish with sprigs of mint or dill before serving.Serves 12.

Hair Chameleon

When it comes to fashion & hair, I am sort of like a chameleon–always changing.  I find that since I do not take many daring risks like skydiving or gambling that chopping my hair off or dying it dark is an adrenaline rush for me.  I am an Aries (the fire sign) and Aries tend to love change and get bored easily.  My go-to signature look is long highlighted blonde hair and is the most “me” look, however once in a while it’s fun to completely change your look.  I decided to go through a few of my different looks and see what you think!

Neon Touches

Neon has been an in & out trend since the 80’s.  It’s definitely in an “in” phase right now.  The key is subtly and using neon to accent rather than define your outfit.  Neon is a super fun way to really light up your look.

Tuesday Cures

It’s the first day of normalcy for me– back to work and back to reality.  I know a lot of you feel the same way whether you are back to work, returning from winter break and starting spring semester, or just recuperating from the holidays.  Since today was my first day back to work, I needed a little inspiration.

First, I need a breakfast for champs. 

One of my favorites is a Greek Yogurt parfait shown  here.

Then, I needed to dress my desk up a little.  Since I still did not have a wedding photo at my desk, I added one. 

Since I was still in vacation mode last night, my mom had us over for dinner and wine.  So, since I was out later than expected I DVRed my favorite premiere’s last night. Pretty Little Liars on ABC Family, 2 Broke girls on CBS, & The Bachelor on ABC.
